Many people think that Thai spring rolls require a lot of skill. However, there really isn’t any skill involved at all!

- 4 Spring roll wrappers
- 50 Grams of glass noodles. Soaked in water for 5-10 minutes, drained and cut into short lengths
- 1 tsbp chopped garlic
- 2 tsbp bean sprouts
- 2 tsbp of tofu
- 2 tsbp chopped up spring onion
- 2 tsbp sliced carrots
- 1 tsbp fish sauce
- 1 tsbp of sugar
- 1 tsbp of oyster sauce
- Cooking oil
- 1 Beaten egg
Please note: It’s not super important to have ALL these ingredients. You can mix it up as you please! Feel free to add chicken or pork.
Heat up the oil in a wok and add the tofu and garlic until golden brown.
Add fish sauce, sugar and oyster oil.
After a minute or two, add the glass noodles, spring onion, carrot and sprouts.
Once cooked, remove off heat and set aside.
Making The Spring Rolls:
Lay one spring roll wrapper on a flat surface and place 1 tspb (or more) of the filling on the lower part of the wrapper. Roll up and fold both end parts in, and seal with egg wash.
Repeat for all the remaining spring rolls.
Cooking The Spring Rolls:
Add the spring rolls to hot oil in the wok, and deep fry until golden brown.
Drain and allow to cool down for a few minutes, then serve with sweet chilli sauce and enjoy!
