When you think of Thai cuisine, a few dishes immediately pop up.
Pad thai, spring rolls, noodle soup, and of course, a Thai green curry!
This Thai green curry recipe is extremely simple to make and tastes amazing.
I have added the curry paste recipe too for those of you who want to go 100% authentic. Sometimes these ingredients are hard to come by, so a store bought green curry paste is also fine.

Making The Curry Paste
Curry Paste Ingredients:
Feel free to skip this part and buy a ready made paste. I recommend this curry paste!
If you want be 100% authentic and are able to find all the ingredients, then go ahead and make the paste yourself!
- 2-3 Long chillies
- 10-15 Sweet basil leaves
- 1 tbsp chopped shallots
- 1 tsp chopped garlic
- 1 tsp chopped galangal
- 1/2 tsp chopped kaffir lime leaves
- 1 tbsp lemon grass
- 1 tbsp finger root
- 1/4 tsp roasted cumin
- 1 tsp chopped coriander root
- 1/4 tsp roasted coriander seeds
- 1/4 tsp of salt
- 1 tsp soya bean paste

Place all the ingredients into a Mortar & Pestle and begin to slowly crush them.
This will take a few minutes of hard work! Once the ingredients have turned into a consistent paste, you can stop and move onto the next step.
Making The Curry
Curry Ingredients:
- 1 Cup of coconut milk
- 1 Cup of water
- 1/2 Cup of slice sweet egg plant plus any vegetables you would like to add
- 2-3 Kaffir lime leaves
- 10-15 Sweet basil leaves
- 1 Red chilli slice lengthwise
- 1 tbsp of green curry paste made before
- 1 tbsp of soya bean sauce
- 1 tbsp sugar
Place coconut milk in wok and turn on medium heat. Add the green curry paste and stir well until you can see oil coming from the coconut milk.
Add remaining vegetables and keep stirring for 3 to 4 minutes.
Add water, bring to boil over medium heat then add soya sauce and sugar.
Once the vegetables are cooked, pour curry into a bowl and garnish with red chilli and sweet basil leaves.
Serve with rice.
Quick note: If you want to add chicken, then do so when adding the vegetables!
